Ingredients

· 1 medium sweet potato

· ¼ cup frozen peas

· ¼ cup diced carrots

· ¼ cup cooked ground beef

Directions

1. In a large pot, boil the sweet potato until tender about 35 minutes.

2. Remove from pot and let cool. Once cooled, peel the skin off and in a bowl mash the potato until a smooth consistency is formed.

3. In a medium pan, add the frozen peas, carrots, and ground beef until fully cooked.

4. Add a layer of the vegetable and meat mixture into a small ramekin and top with a layer of the mashed sweet potato.
