This easy, crunchy edamame treat is made with just two ingredients but is packed with plant-based protein and healthy fats—perfect for a nutritious snack!

Ingredients
· Edamame
· 2 tbsp coconut oil
Directions
1. Remove the shell of the edamame by squeezing the beans out of the pods. Pat them dry on a lined baking sheet - or air fryer.
2. Add coconut oil, and mix until coated.
3. Bake at 375°F for 30 min, shaking pan halfway through to get crispy - or air fry at 375°F for 15 min, shaking halfway through.
4. Let cool completely. Store in an airtight container for up to a week.
